Ham and Cheese Egg Muffin Cups
Baking eggs into muffin cups makes portioning almost automatic, and it's an easy way to get a classic ham and cheese omelet into a grab-and-go format. These hold up well in the fridge and don't need much more than a quick reheat.
A muffin tin turns scrambled eggs into individual portions without needing to measure anything out later, which is part of why this is one of my easiest breakfasts to prep. Ham and cheddar are a classic combination that doesn't need much else added.
These reheat quickly, whether in the microwave or straight from the fridge at room temperature, which makes them a good grab-and-go option on busy mornings. Bell pepper adds a little color and crunch to what's otherwise a pretty classic combination.

Ingredients
• 25 eggs
• 2 1/2 lb diced ham
• 2 cups shredded cheddar
• 2 1/2 bell peppers, diced
• 1 cup milk
• salt and pepper
• 2 tsp garlic powder
• cooking spray
Directions
1. Whisk the eggs with milk, salt, pepper, and garlic powder.
2. Stir in the ham, cheddar, and bell pepper.
3. Divide into a greased muffin tin and bake at 350°F for 18–20 minutes, until set.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers, 3 muffin cups per portion.
