Buffalo Cauliflower Quinoa Bowls
Roasting the cauliflower first is what gives it enough texture to stand in for meat here, and tossing it in buffalo sauce afterward means it still gets that same tangy heat as buffalo chicken. It's one of the few fully plant-based meals in my rotation with real kick.
Cauliflower roasted long enough actually holds its own against a sauce this bold, instead of turning soggy the way it might steamed. Quinoa and black beans add the protein that a vegetable alone wouldn't provide.
A spoonful of yogurt at the end cools down the buffalo heat the same way ranch or blue cheese would, without the extra fat. This bowl has real heat, so I always keep the yogurt on hand.

What I really like about this recipe is how much roasting brings out in the cauliflower before the buffalo sauce even goes on.
Ingredients
• 15 cups cauliflower florets
• 7 1/2 cups cooked quinoa
• 2 1/2 cans black beans, drained
• 1 cup buffalo sauce
• 2/3 cup plain yogurt
• 5 tbsp olive oil
• 2 1/2 tsp garlic powder
• salt and pepper
Directions
1. Toss the cauliflower with olive oil, garlic powder, salt and pepper.
2. Roast at 425°F for 25–30 minutes, until browned at the edges.
3. Toss the roasted cauliflower with buffalo sauce.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with quinoa and black beans. Add a spoonful of yogurt just before eating.
