Chipotle Black Bean Sweet Potato Bowls

Chipotle chili powder gives this bowl a smokier heat than my usual black bean and sweet potato combinations, and roasting the sweet potatoes until they caramelize adds a natural sweetness that balances it out. It's a fully plant-based bowl that doesn't feel like it's missing anything.

Roasting the sweet potatoes at a high temperature is what gets those caramelized edges, which add more flavor than just steaming or boiling them would. Black beans add the protein and fiber that make this filling enough on its own.

Chipotle brings a smokiness that's different from the plain chili powder I use in a lot of my other bowls, so this one doesn't taste like a repeat of my other Southwest-style meals. Avocado added at the end keeps it feeling fresh.

What I really like about this recipe is how much smokier the chipotle makes it compared to a plain chili powder version.

Ingredients

• 12 1/2 cups sweet potato, cubed

• 5 cans black beans, drained

• 7 1/2 cups cooked rice

• 2 1/2 avocado, sliced

• 5 tbsp olive oil

• 2 1/2 tbsp chipotle chili powder

• 2 1/2 lime, juiced

• salt and pepper

Directions

1. Toss the sweet potatoes with olive oil, chipotle chili powder, salt and pepper.

2. Roast at 425°F for 25–30 minutes, until tender and caramelized at the edges.

3. Warm the black beans with a squeeze of lime.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with rice. Add avocado just before eating.
