Shrimp Scampi with Zucchini Noodles

This is a lighter version of my usual garlic butter shrimp pasta, cutting the noodles with zucchini instead of using pasta alone. It keeps the same garlicky, buttery flavor while trimming back on the carbs a little.

Half zucchini noodles and half regular pasta is a compromise that keeps this filling without leaning entirely on spiralized vegetables, which can get watery on their own. Garlic and butter still do most of the flavor work here.

Shrimp cooks in just a few minutes, so I always add it back in at the end to keep it from overcooking while the noodles finish. Lemon juice keeps the whole dish tasting bright instead of just rich.

What I really like about this recipe is that swapping in zucchini noodles doesn't take away from how rich the garlic butter sauce tastes.

Ingredients

• 5 lb shrimp, peeled and deveined

• 12 1/2 cups zucchini noodles

• 15 oz dry linguine, cooked

• 5 tbsp butter

• 2 1/2 tbsp olive oil

• 2/3 cup grated Parmesan

• 5 cloves garlic, minced

• 2 1/2 lemon, juiced

Directions

1. Sauté the garlic in butter and olive oil until fragrant.

2. Add the shrimp and cook 3–4 minutes, until pink and cooked through; remove from the pan.

3. Add the zucchini noodles and linguine to the same pan and toss with lemon juice until just warmed.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with the shrimp and Parmesan.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat gently to avoid overcooking the shrimp. Nutrition is estimated per portion.
