Miso Glazed Salmon with Soba Noodles
Miso paste is what gives this glaze a savory depth that a plain honey soy sauce doesn't have, and it caramelizes nicely under the broiler. Soba noodles are a nice change of pace from rice, with a slightly nuttier flavor of their own.
The miso glaze needs almost no active cooking time, just a quick whisk before it goes under the broiler with the salmon. Bok choy wilts fast, so it's an easy vegetable to work into the noodles without much extra effort.
Soba noodles hold their texture reasonably well through a few days of reheating, unlike some noodles that turn mushy. The glaze on the salmon still tastes good even after a couple of days in the fridge.
The recipe card has the full ingredient breakdown and broil time for all ten portions. Let the salmon cool before dividing everything into containers, then refrigerate what you'll eat within four days. Reheat gently so the salmon doesn't overcook.

What I really like about this recipe is how much savory depth the miso glaze adds compared to a plain soy-based sauce.
Ingredients
• 3 3/4 lb salmon fillets
• 30 oz dry soba noodles, cooked
• 7 1/2 cups chopped bok choy
• 2 1/2 tbsp honey
• 5 tbsp low-sodium soy sauce
• 2 1/2 tbsp olive oil
• 2 1/2 tbsp white miso paste
• 2 1/2 tsp sesame seeds
Directions
1. Whisk miso paste, honey, and 2 1/2 tbsp of the soy sauce into a glaze; brush over the salmon.
2. Broil the salmon 6–8 minutes, until glazed and cooked through.
3. Toss the soba noodles and bok choy with the remaining soy sauce and olive oil.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers.
Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat gently to avoid overcooking the salmon. Nutrition is estimated per portion.
