Breakfast Burrito Bowls

This is a heartier breakfast than my usual egg and sausage bowl, adding black beans and salsa to make it taste more like a burrito filling than a plain scramble. It's a good option for mornings when I want something with a little more substance.

Roasting the potatoes separately gives them a better texture than if they were just pan-fried alongside everything else. Black beans add fiber and protein on top of the eggs and sausage, which is part of why this one keeps me full for longer.

Salsa added at the end keeps this from tasting like a plain scramble, giving it that same burrito flavor without needing a tortilla. Cheese melted on top ties everything together.

What I really like about this recipe is that it tastes like a burrito filling without needing an actual tortilla.

Ingredients

• 25 eggs

• 2 1/2 lb breakfast sausage, crumbled

• 2 1/2 cans black beans, drained

• 7 1/2 cups potatoes, cubed

• 2 1/2 cups salsa

• 1 cup shredded Mexican cheese blend

• 2 1/2 tsp cumin

• salt and pepper

Directions

1. Roast the potatoes with cumin, salt and pepper at 425°F for 25 minutes.

2. Cook the sausage in a pan until browned; warm the black beans alongside it.

3. Scramble the eggs.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Top with salsa and cheese just before eating.
