Blueberry Almond Baked Oatmeal Cups

Baking the oats into individual cups is a nice change from my usual overnight oats, giving them a texture closer to a muffin than a bowl of porridge. Blueberries burst slightly in the oven, which spreads their sweetness through the whole batch.

Baking these in a muffin tin makes portioning almost automatic, since each cup is close to a single serving on its own. Almonds on top add a bit of crunch that a soft baked oatmeal would otherwise be missing.

This is a good option for anyone who doesn't love the texture of overnight oats but still wants something oat-based for breakfast. They hold up fine at room temperature, so they travel well too.

What I really like about this recipe is that baking the oats gives them a completely different texture than my usual overnight version.

Ingredients

• 7 1/2 cups rolled oats

• 3 3/4 cups milk

• 5 eggs

• 5 cups blueberries

• 1 cup sliced almonds

• 5 tbsp honey

• 2 1/2 tsp cinnamon

• 2 1/2 tsp baking powder

Directions

1. Whisk together milk, eggs, honey, cinnamon, and baking powder.

2. Stir in the oats, blueberries, and most of the almonds; divide into a greased muffin tin.

3. Top with the remaining almonds and bake at 375°F for 22–25 minutes, until set.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers, 2 cups per portion.
