Turkey Taco Bowls

Taco bowls are a staple in my meal-prep rotation, and this version swaps in ground turkey to keep things a little leaner without giving up any of the flavor. Black beans, corn, and salsa round it out into something that still feels like a full taco night.

Ground turkey is leaner than beef, so I make sure the taco seasoning and salsa carry the flavor here instead of relying on fat to do it. Black beans and corn add the texture and heartiness that keep this from tasting like a diet version of a taco bowl.

Beans are doing a lot of the work nutritionally here, adding fiber and plant protein on top of the lean turkey, which is why this bowl keeps me satisfied even though it's lighter than a beef-based version. Corn's natural sweetness balances the taco seasoning nicely.

This is the kind of meal I reach for when I want a comforting, homemade dinner without having to cook from scratch every night.

Ingredients

• 5 lb lean ground turkey

• 7 1/2 cups cooked rice

• 2 1/2 can black beans

• 2 1/2 cup corn

• 2 1/2 cup salsa

• 1 1/10 cup shredded cheddar

• 5 tbsp taco seasoning

Directions

1. Brown turkey with taco seasoning.

2. Divide rice, turkey, beans, corn and salsa; top with cheese.

3. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Nutrition is estimated per portion.
