Savory Cottage Cheese Breakfast Bowls

This is a savory breakfast instead of a sweet one, leaning on cottage cheese as the protein base with fresh vegetables on top instead of fruit and granola. It's become a good option for mornings when I don't want something sweet.

Cottage cheese has a solid amount of protein on its own, which makes this filling without needing eggs or meat. Everything bagel seasoning adds a lot of flavor for very little effort, since it's really just a sprinkle.

This is one of the few no-cook breakfasts in my rotation that isn't oats or yogurt-based, which makes it a nice change of pace. Avocado added fresh keeps it from browning in the container.

Ingredients

• 15 cups cottage cheese

• 5 tomatoes, diced

• 5 cucumbers, diced

• 2 1/2 avocados, sliced

• 2 tbsp olive oil

• 3 tsp everything bagel seasoning

• salt and pepper

• 2 tbsp lemon juice

Directions

1. Divide the cottage cheese into containers.

2. Top with diced tomato and cucumber.

3. Drizzle with olive oil and lemon juice, and sprinkle with everything bagel seasoning.

4. Add the avocado just before eating.
