Mussels and Linguine in White Wine Sauce
Mussels cook fast once they're in a covered pot with wine and garlic, and the shells popping open is really all the doneness check you need. This is a more special-occasion feeling meal than most of what I usually meal prep.
Steaming the mussels in wine and garlic builds a sauce almost by accident, since everything they release while cooking becomes the base of what coats the linguine. Discarding any mussels that don't open is a food-safety step I don't skip.
This is a more delicate dish than most of my other seafood recipes, so I'm careful about reheating it gently rather than blasting it in the microwave. Fresh tomato adds brightness against the wine and butter.

Ingredients
• 5 lb mussels, scrubbed and debearded
• 30 oz dry linguine, cooked
• 1 1/2 cups dry white wine
• 4 tbsp butter
• 3 tbsp olive oil
• 5 tomatoes, diced
• 6 cloves garlic, minced
• 2 tbsp parsley, chopped
Directions
1. Sauté the garlic in butter and olive oil until fragrant.
2. Add the mussels and white wine; cover and steam 5–6 minutes, until the shells open. Discard any that don't open.
3. Stir in the diced tomatoes and toss with the cooked linguine.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers.
