Sausage Peppers & Potatoes

This is the one I make when I want minimal cleanup, since chicken sausage, potatoes, peppers, and onions all roast together on a single sheet pan. There's no sauce to whisk together and barely any hands-on cooking involved.

Chicken sausage brings a lot of flavor on its own, so I don't need much beyond peppers, onions, and potatoes to round out this one-pan meal. Roasting everything together means the potatoes pick up some of the sausage's seasoning as they cook.

This is one of the simpler meal preps in my rotation, closer to a sheet-pan dinner than a bowl, and it reheats well since nothing in it is delicate. Peppers and onions add sweetness once roasted, which balances the savory sausage nicely.

Full ingredient amounts and roasting time are on the recipe card, scaled for ten portions. Let everything cool before sealing the containers, then refrigerate what you'll eat within four days and freeze the rest. This sausage and potato sheet pan meal is one of the easiest recipes in my whole rotation.

I love this one for meal prep because every container has a satisfying mix of protein, vegetables, and a hearty base.

Ingredients

• 3 3/4 lb chicken sausage

• 10 cups baby potatoes

• 7 1/2 bell peppers

• 2 1/2 onion

• 5 tbsp olive oil

• 2 1/2 tsp Italian seasoning

Directions

1. Toss all ingredients with oil and seasoning.

2. Roast at 425°F for 30–35 minutes, stirring once.

3. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Nutrition is estimated per portion.
