Beef Lasagna Meal Prep

Lasagna takes more effort than most of my other meal preps, but layering it into a big dish and portioning it out afterward means the work only happens once. Ricotta and spinach keep the layers from feeling one-note against all that beef and cheese.

Layering beef, ricotta, and spinach between noodles is what makes this taste like a real lasagna rather than a shortcut version, even though it's built for individual portions. Mozzarella on top gets that golden, slightly crisp finish I look for every time I bake it.

Spinach wilts into the ricotta layer, so it's an easy way to add a vegetable without changing the flavor of the dish much. Lasagna is one of the best meal-prep options for freezing, since the layers hold together well even after being frozen and reheated.

The recipe card has the full ingredient list and baking time for the entire ten-portion batch. Let the lasagna cool before portioning it into containers, then refrigerate what you'll eat within four days. This is one of the few recipes in my rotation I make specifically because it freezes so well.

What I really like about this recipe is how easy it is to customize at serving time with a fresh topping or extra sauce.

Ingredients

• 30 lasagna noodles

• 3 3/4 lb lean ground beef

• 7 1/2 cups marinara

• 5 cups part-skim ricotta

• 5 cups mozzarella

• 1 1/10 cup Parmesan

• 5 cups spinach

Directions

1. Brown beef.

2. Layer noodles, ricotta, spinach, beef sauce and mozzarella in a baking dish.

3. Repeat and top with Parmesan.

4. Bake at 375°F for 40 minutes.

5. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Nutrition is estimated per portion.
