Peanut Butter Banana Overnight Oats

Some mornings I don't even want to think about breakfast, which is exactly what this recipe solves. Oats, peanut butter, and banana get stirred together the night before, so all that's left in the morning is grabbing a jar from the fridge.

This is the only no-cook recipe in my rotation, since the oats soften overnight in the fridge without ever touching a stove. Peanut butter and banana are a classic pairing, and Greek yogurt adds extra protein that plain oats don't have on their own.

Chia seeds thicken the mixture as it sits, giving these oats a pudding-like texture rather than a soupy one. This is my favorite grab-and-go breakfast option, since each portion is ready to eat straight from the fridge with no prep in the morning.

This is the kind of meal I reach for when I want a comforting, homemade dinner without having to cook from scratch every night.

Ingredients

• 5 cups rolled oats

• 5 cups milk

• 2 1/2 cup Greek yogurt

• 2 bananas

• 1 1/10 cup peanut butter

• 5 tbsp chia seeds

• 2 1/2 tbsp honey

Directions

1. Divide oats, milk, yogurt, mashed banana, peanut butter, chia and honey among jars.

2. Stir, cover and refrigerate overnight.

3. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Nutrition is estimated per portion.
