Mediterranean Quinoa Bowls
This is a no-cook-required bowl once the quinoa is done, since everything else just gets chopped and tossed together. It's one of the easiest ones to prep ahead of a busy week because there's no reheating step to plan around.
Quinoa and chickpeas together give this bowl two plant-based proteins, so it holds its own even without meat. Feta and olives add the salty, briny notes that make Mediterranean flavors work so well together.
Cucumber and tomato stay fresh and crisp since they're added raw rather than cooked, which keeps this bowl feeling light. This is one of my favorite bowls to eat cold straight from the fridge, since the flavors hold up well without reheating.

This is the kind of meal I reach for when I want a comforting, homemade dinner without having to cook from scratch every night.
Ingredients
• 7 1/2 cups cooked quinoa
• 5 cans chickpeas
• 5 cucumbers
• 5 tomatoes
• 1 1/10 cup feta
• 5/6 cup olives
• 5 tbsp olive oil
• 5 tbsp lemon juice
Directions
1. Combine quinoa, chickpeas, vegetables, feta and olives.
2. Dress with olive oil and lemon.
3. Portion into containers.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.
