Turkey Meatloaf with Mashed Sweet Potatoes
This is a lighter spin on classic meatloaf, using ground turkey instead of beef and mashed sweet potatoes instead of the usual white mashed potatoes. It's a good option whenever I want something that feels like a real dinner without being too heavy.
Turkey needs a bit more help than beef to stay moist, which is why the breadcrumbs and egg matter here more than they would in a beef meatloaf. A ketchup glaze on top adds just enough sweetness to keep it from tasting plain.
Sweet potatoes mash up naturally sweet, which pairs well against the savory meatloaf without needing extra sugar or butter. Green beans round out the plate with something green and a little crisp.

Ingredients
• 5 lb ground turkey
• 2 1/2 eggs
• 1 cup breadcrumbs
• 7 1/2 cups sweet potato, cubed
• 7 1/2 cups green beans
• 2/3 cup ketchup
• 2 1/2 tsp garlic powder and onion powder
• salt and pepper
Directions
1. Mix ground turkey, egg, breadcrumbs, seasoning, and half the ketchup; press into a loaf pan and top with remaining ketchup.
2. Bake at 375°F for 45–50 minutes, until cooked through.
3. Boil the sweet potatoes until fork-tender, then mash. Steam the green beans.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers.
