Salisbury Steak with Mashed Potatoes
Salisbury steak is basically a hamburger patty dressed up with mushroom gravy, and it's one of the more nostalgic comfort meals I keep in rotation. Mashed potatoes underneath soak up the gravy the way they're supposed to.
Searing the patties first and building the gravy in the same pan means the gravy picks up all that browned flavor left behind. Mushrooms add an earthiness that a plain beef gravy wouldn't have on its own.
This is a heartier, gravy-based dinner that's a nice change from my usual rice and bean bowls. Mashed potatoes are a more involved side than rice, but they're worth it here.

Ingredients
• 3 3/4 lb ground beef
• 1 cup breadcrumbs
• 2 eggs
• 5 cups sliced mushrooms
• 7 1/2 cups potatoes, peeled and cubed
• 1 cup light sour cream
• 2 tbsp flour
• 2 tbsp butter
Directions
1. Mix ground beef, breadcrumbs, and egg; form into oval patties and sear until browned.
2. Cook mushrooms in the same pan, then sprinkle in flour and whisk in water to build a gravy; simmer with the patties until cooked through.
