Pork Schnitzel with Spätzle and Cabbage

This is my German-style breaded cutlet, using pork instead of chicken and egg noodles instead of rice to lean into that flavor profile. Buttered cabbage on the side is a classic pairing that doesn't need much dressing up.

Pounding the pork thin is what keeps the schnitzel cooking evenly and quickly, the same technique I use for my breaded chicken dishes. A squeeze of lemon at the end cuts through the richness of the fried coating.

Cabbage sautéed in butter is a simple side, but it's the traditional pairing for a reason, since its slight bitterness balances the fried pork. Egg noodles underneath round out the plate into something substantial.

The recipe card has the full ingredient breakdown and cook time for all ten portions. Let the pork cool before dividing everything into containers, then refrigerate what you'll eat within four days. Reheat in a toaster oven if you can, to keep the coating from getting soggy.

ESTIMATED NUTRITION

830 calories • 63g protein • 74g carbs • 30g fat per portion

What I really like about this recipe is how well the simple buttered cabbage balances the richness of the fried pork.

Ingredients

• 5 lb pork cutlets, pounded thin

• 3 cups panko breadcrumbs

• 3 eggs, beaten

• 30 oz dry egg noodles, cooked

• 7 1/2 cups shredded cabbage

• 5 tbsp olive oil

• 2 tbsp butter

• 2 lemons, cut into wedges

Directions

1. Dip the pork cutlets in egg, then coat in panko.

2. Pan-fry in olive oil, 3 minutes per side, until golden and cooked through.

3. Sauté the cabbage in butter until softened, about 8 minutes.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with egg noodles and cabbage.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat gently to keep the coating from turning soggy. Nutrition is estimated per portion.
