Mediterranean Chicken Couscous

This is my Mediterranean-leaning answer to the usual chicken and rice bowl, built around couscous, chickpeas, and feta instead. It's a longer ingredient list than some of my other recipes, but most of it is just tossing everything together once the chicken is done.

Couscous cooks up light and fluffy, which makes it a nice change of pace from rice, and it takes on the flavor of whatever herbs and lemon the chicken is marinated in. Chickpeas and feta round the bowl out with extra protein and a salty finish.

The vegetables here get roasted alongside the chicken, so they pick up the same herby, lemony flavor instead of tasting like an afterthought. Chickpeas add fiber and a bit of bite that keeps the couscous from feeling too soft on its own.

Let everything cool before sealing the containers, then refrigerate what you'll eat within four days and freeze the rest. Mediterranean Chicken Couscous

I love this one for meal prep because every container has a satisfying mix of protein, vegetables, and a hearty base.

Ingredients

• 3 3/4 lb chicken breast

• 7 1/2 cups cooked couscous

• 2 1/2 cucumber

• 5 tomatoes

• 1 1/10 cup chickpeas

• 5/6 cup feta

• 5 tbsp olive oil

• 5 tbsp lemon juice

Directions

1. Cook chicken with lemon and half the oil.

2. Toss couscous, vegetables, chickpeas, feta and remaining oil.

3. Portion with chicken.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Nutrition is estimated per portion.
