Ingredients

• 5 lb chicken breast

• 10 cups baby potatoes, halved

• 10 cups zucchini

• 5 tbsp olive oil

• 5 tbsp lemon juice

• 2 1/2 tsp Italian seasoning

• 2 1/2 tsp garlic powder

Directions

1. Toss everything with oil, lemon and seasonings.

2. Roast at 425°F for 25–30 minutes, until chicken reaches 165°F.

3. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.
