Honey Garlic Chicken & Green Beans

There's nothing complicated about this one. Chicken, green beans, and a sticky honey garlic glaze come together in the same pan. I like keeping at least one meal like this in rotation, since it's quick to prep and doesn't rely on a long ingredient list to taste good.

The honey garlic sauce here is sticky and a little sweet, which plays nicely against the green beans and keeps the chicken from tasting plain. It's one of the simpler bowls I make, but the glaze does a lot of the flavor work on its own.

Green beans keep a decent bite even after a few days in the fridge, so I don't worry about them turning limp the way some vegetables do. Paired with rice, this bowl reheats fast and tastes just as good on day three as it does fresh.

This is the kind of meal I reach for when I want a comforting, homemade dinner without having to cook from scratch every night.

Ingredients

• 5 lb chicken breast

• 12 1/2 cups green beans

• 7 1/2 cups cooked rice

• 7 1/2 tbsp honey

• 7 1/2 tbsp low-sodium soy sauce

• 2 1/2 tbsp garlic

• 2 1/2 tbsp olive oil

Directions

1. Cook chicken in oil.

2. Add garlic, honey and soy sauce; simmer 2–3 minutes.

3. Steam green beans.

4. Portion with rice.

5. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add avocado or other delicate fresh toppings just before eating.
