Eggplant Parmesan Bake
This is a meatless main that still feels substantial, breading and frying the eggplant before it gets layered with marinara and cheese. It's more hands-on than most of my other vegetarian recipes, but it bakes into something that reheats really well.
Frying the eggplant first is what keeps it from turning to mush once it's baked under all that sauce and cheese. Breadcrumbs give it a texture that holds up surprisingly well through a few days of reheating.
Marinara and a mix of mozzarella and Parmesan give this the same flavor as a classic chicken Parmesan, just without the chicken. Serving it over pasta rounds it out into a complete meal instead of just a side dish.

What I really like about this recipe is that it gets all the same flavors as chicken Parmesan without needing any meat.
Ingredients
• 5 large eggplants, sliced
• 3 3/4 cups breadcrumbs
• 5 eggs, beaten
• 7 1/2 cups marinara sauce
• 3 3/4 cups shredded mozzarella
• 1 cup grated Parmesan
• 15 oz dry pasta, cooked
• 5 tbsp olive oil
Directions
1. Dip the eggplant slices in egg, then coat in breadcrumbs.
2. Pan-fry in olive oil in batches until golden on both sides.
3. Layer the eggplant with marinara and cheese in a baking dish; bake at 375°F for 25 minutes.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with the pasta.
