Crab Cake Bowls with Remoulade

Crab cakes take a bit more care than most of my other proteins, but keeping the binder light lets the crab flavor stay in front instead of tasting like a breadcrumb patty. A quick remoulade on the side gives them the same finish they'd get at a seafood restaurant.

Using just enough panko and egg to hold the patties together is what keeps the crab flavor from getting buried under filler. Searing them in a hot pan gives a golden crust without needing to deep fry anything.

Remoulade is simple to throw together from mayo and a few seasonings, but it makes a real difference drizzled over the top instead of serving the crab cakes plain. Corn and rice underneath round out the plate.

Ingredients

• 3 3/4 lb lump crab meat

• 2 cups panko breadcrumbs

• 3 eggs, beaten

• 3 tbsp light mayonnaise

• 7 1/2 cups cooked rice

• 2 cups corn

• 3 tbsp olive oil

• 2 tsp Old Bay seasoning

Directions

1. Mix crab meat, panko, egg, 1 tbsp of the mayo, and Old Bay; form into patties.

2. Pan-sear in olive oil, 3–4 minutes per side, until golden.

3. Whisk the remaining mayo with a little extra Old Bay and lemon for remoulade.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with rice and corn. Add remoulade just before eating.
