Chicken Enchilada Rice Bowls

This is enchilada flavor without any of the rolling or baking, tossing shredded chicken right in the sauce and building a bowl around it instead. It's a lot faster than making actual enchiladas while still hitting the same flavor notes.

Shredding the chicken means it soaks up the enchilada sauce more evenly than sliced or cubed chicken would. Black beans add the same heartiness I look for in most of my Tex-Mex bowls.

This is one of the quicker Mexican-inspired bowls I make, since there's no assembly or baking involved beyond warming everything through. Cheese melted on top gives it that same finish as baked enchiladas.

The recipe card has the full ingredient list and cook time for all ten portions. Let the chicken cool before dividing everything into containers, then refrigerate what you'll eat within four days and freeze the rest. This enchilada bowl is a faster way to get that flavor without the assembly.

What I really like about this recipe is that it gets enchilada flavor into a bowl without any rolling or baking.

Ingredients

• 5 lb chicken breast, shredded

• 3 cups enchilada sauce

• 7 1/2 cups cooked rice

• 2 cans black beans, drained

• 1 1/2 cups shredded Mexican cheese blend

• 2 tbsp olive oil

• 2 tsp cumin

• salt and pepper

Directions

1. Poach or bake the chicken until cooked through, then shred.

2. Toss the shredded chicken with the enchilada sauce and cumin; simmer 5 minutes.

3. Warm the black beans.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with rice and cheese.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Nutrition is estimated per portion.
