Beef Taco Bowls with Cabbage Slaw
This is my taco bowl with a slaw instead of lettuce, since shredded cabbage holds up in the fridge far better than anything leafy. It's a small swap that makes the whole thing more practical for a full week of lunches.
Cabbage stays crunchy for days, which is exactly why I use it instead of lettuce in anything meant to sit in the fridge. A quick lime and mayo dressing turns it into a real slaw instead of just raw cabbage on top.
Ground beef and taco seasoning are the same base I use in most of my Tex-Mex bowls, but the slaw gives this one a different texture than my usual rice and bean combinations. Cheddar adds richness right before eating.

Ingredients
• 3 3/4 lb ground beef
• 7 1/2 cups cooked rice
• 7 1/2 cups shredded cabbage
• 2 1/2 tbsp light mayonnaise
• 1 cup shredded cheddar
• 5 tbsp taco seasoning
• 2 1/2 lime, juiced
• salt and pepper
Directions
1. Brown the ground beef with taco seasoning.
2. Toss the shredded cabbage with mayonnaise and lime juice to make a quick slaw.
3. Divide the beef and rice into containers.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add the slaw and cheese just before eating.
