Beef Gyro Bowls with Tzatziki

Ground beef stands in for the spit-roasted meat you'd usually find in a gyro, seasoned with the same oregano and garlic flavors. A quick tzatziki made from yogurt and cucumber is what really makes this taste like the real thing.

Oregano and garlic are really all the seasoning ground beef needs to taste like a gyro instead of a plain taco filling. Rice underneath makes this more of a bowl than a wrap, which suits meal prep a lot better.

Tzatziki is simple to throw together, but keeping it separate until serving is what keeps the whole bowl from turning watery in the fridge. Tomato and cucumber add freshness that balances the richer beef.

The recipe card has the full ingredient list and cook time for all ten portions. Let the beef cool before dividing everything into containers, then refrigerate what you'll eat within four days and freeze the rest. Keep the tzatziki separate and add it fresh.

What I really like about this recipe is how close the ground beef and oregano get to real gyro meat flavor.

Ingredients

• 3 3/4 lb ground beef

• 7 1/2 cups cooked rice

• 5 cucumbers, diced

• 5 tomatoes, diced

• 1 1/2 cups plain yogurt

• 2 tbsp olive oil

• 5 tsp oregano and garlic powder

• salt and pepper

Directions

1. Brown the ground beef with oregano, garlic powder, salt and pepper.

2. Mix half the yogurt with diced cucumber, salt, and a little garlic to make tzatziki.

3. Divide the beef, rice, and tomato into containers.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers. Add tzatziki just before eating.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Keep the tzatziki separate until serving. Nutrition is estimated per portion.
