Beef and Pepper Jack Quesadilla Bowls

This is the beef version of my vegetarian quesadilla bowls, using pepper jack instead of a Mexican blend for a little extra kick. Crisping the folded tortillas and slicing them into strips makes portioning a lot more even than trying to divide whole quesadillas.

Pepper jack melts just as well as a regular cheese blend but adds a bit of heat that plain cheddar wouldn't. Ground beef gives this more richness than the vegetarian version, without much extra effort.

Frying the folded tortillas is what gives them that crisp quesadilla texture before they get sliced. Corn adds a little sweetness that balances the pepper jack's heat.

What I really like about this recipe is that pepper jack adds a kick that a plain cheese blend wouldn't.

Ingredients

• 3 3/4 lb ground beef

• 15 small flour tortillas

• 3 cups shredded pepper jack cheese

• 2 cups corn

• 5 cups cooked rice

• 2 tbsp olive oil

• 2 tbsp taco seasoning

• salt and pepper

Directions

1. Brown the ground beef with taco seasoning.

2. Fill tortillas with beef, cheese, and corn; fold in half.

3. Pan-fry in olive oil until golden and crisp, about 2 minutes per side; slice into strips.

4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers with rice.

Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat in a pan or oven to keep the tortilla crisp, if possible. Nutrition is estimated per portion.
