Beef and Broccoli Ramen Bowls
This uses plain ramen noodles without the seasoning packet, since the soy sauce and sesame oil already do the flavor work. It's a faster way to get that beef and broccoli combination into noodle form instead of over rice.
Ramen noodles cook in just a couple of minutes, which makes this one of the quicker noodle dishes I put together. Thin-sliced beef sears fast enough that the whole thing comes together in about the same time as the noodles.
Skipping the seasoning packet keeps the sodium more reasonable, since the soy sauce and aromatics already bring plenty of flavor on their own. Broccoli adds crunch against the soft noodles.

What I really like about this recipe is that skipping the seasoning packet doesn't cost it any flavor.
Ingredients
• 3 3/4 lb thin-sliced beef sirloin
• 7 1/2 cups broccoli florets
• 30 oz dry ramen noodles, cooked (seasoning packets discarded)
• 5 tbsp low-sodium soy sauce
• 2 tbsp sesame oil
• 5 tsp garlic and ginger, minced
• 2 1/2 green onion, sliced
• 1 tsp red pepper flakes
Directions
1. Sear the beef in a hot pan until browned, 3–4 minutes.
2. Add garlic and ginger, then the broccoli; cook until just tender.
3. Toss with the cooked ramen noodles and soy sauce.
4. Let the food cool briefly, then divide it evenly among 10 airtight meal-prep containers.
Meal-prep notes: Refrigerate promptly and use refrigerated portions within 3–4 days; freeze any portions you will not eat in that window. Reheat hot meals until steaming and 165°F internally. Nutrition is estimated per portion.
